Lamb Meatball Koftas, Potato Gratin Chip with Parmesan Crisp & Mixed Fresh Salad

Kebab and cheesy chips

Ingredients (Enough for 6 portions)

For the kebabs:

  • 500g minced lean beef
  • 1 small onion
  • 1 medium carrot
  • 1 stick celery
  • 1 clove of garlic
  • 1 medium egg
  • 2 slices of stale bread
  • 25g fresh coriander
  • 1 ½ tsp dried harissa
  • 1 tsp ground cumin
  • 1 tsp ground turmeric
  • 1 tsp salt

For the slaw:

  • 1/6th red cabbage
  • 1/6th white cabbage
  • 1 medium carrot
  • 1 small red onion
  • 2 spring onions

For the potato gratin:

  • Ovenproof dish lined with
    greaseproof paper
  • 2kg red rooster potatoes peeled
  • 300ml double cream
  • 100ml full-fat milk
  • 4 cloves garlic
  • Salt and pepper
  • Parmesan block

For the spicy tomato sauce:

  • ½ red onion
  • 1 clove garlic
  • ½ tsp chilli flakes
  • 3 tbsp tomato puree
  • 75g dark brown sugar
  • 100ml cider vinegar
  • 1 tin chopped tomatoes

For the mint yoghurt:

  • ½ cucumber
  • 100ml Greek yoghurt
  • 12 leaves of mint

Total cost = £9.07 | Total cost per person = £1.51

Method

For the potato gratin:

  • Pour the cream, milk and the garlic into a pan. Bring to the boil and then simmer for 5 minutes. Blend with a hand blender and set aside.
  • Peel the potatoes and slice 3mm thick.
  • Get a baking tray lined with baking paper and place the potatoes in layers overlapping on top of each other, and season in between each layer.
  • When all the potatoes have been used, pour on the cream and then place in the oven at 190C for 30 mins.
  • Take out of the oven and chill overnight.
  • Remove from the tin and then trim the outside edges and cut into half, and then into 8. You will have 16 pieces in total.
  • For the parmesan crisp topping, place some silicone paper on a baking sheet and grate the parmesan over the sheet and then bake at 190C until golden.
  • Take out of the oven and whilst still hot, working quickly, cut to the same size as the top of the portioned potatoes.

Kebab and cheesy chips

For the kebab:

  • Peel the onion, carrot, celery, garlic and then process in a hand blender using the food processor attachment. Then do the same with the breadcrumbs.
  • In a bowl add the beef, the processed veg, breadcrumbs, the egg, spices, salt and chopped coriander and mix well.
  • Divide the mix into 16 balls and skewer.

For the slaw:

  • Slice the red and white cabbage, and the red onion as thinly as possible.
  • Using a knife, cut off the top and bottom of the spring onions and slice thinly again.
  • Peel the carrots and grate.
  • Place all the prepared vegetables into a suitable mixing bowl add a drizzle of olive oil and a squeeze of lime to freshen it up, and season with salt and freshly ground black pepper.

For the spicy tomato sauce:

  • In a medium saucepan, heat 2 tbsps of olive oil and then add ½ red onion, 1 clove of chopped garlic and ½ tsp chilli flakes.
  • Cook this on a low heat for a few minutes, and then add the cider vinegar and brown sugar.
  • Simmer for 5 minutes and then add the rest of the ingredients.
  • Simmer for 10 minutes and then blend with a hand blender until smooth, and chill overnight.

Mint cucumber yoghurt:

  • Peel and deseed the cucumber, cutting in half lengthways and scraping out the seeds with a teaspoon.
  • Cut into strips and then dice. Add this to the yoghurt.
  • With a sharp knife cut the mint leaves into thin strips and add to the mix.

To cook and serve:

  • Heat a non-stick frying pan with a little oil and pan fry the kebabs for a minute each side.
  • Transfer on to a lined baking sheet along with 8 pieces of potato gratin. You will have 8 spare pieces you can use later.
  • Cook in the oven at 190C for 15 minutes.
  • Place a little of the slaw on the plate with a dash of the spicy tomato sauce on the side and a generous dollop of the mint yoghurt.
  • Remove the kebab and potato from the oven, place a parmesan wafer on top of each of the potato slices and serve.
