Simple, but oh so good bacon and vegetable omelette recipe
Who says omelettes are for breakfast?! Not me, I enjoy having an omelette for dinner, with an extra egg and some more ingredients. A totally versatile recipe which can be tailored to your own personal taste, vegetarian, packed with meat or just with a few vegetables – it’s completely up to you! This is my favourite way to have an omelette as my evening meal.

Difficulty level: Easy peasy
Serves: 1 person
Half a red bell pepper
Half a red onion
3 rashers of bacon
1 handful of frozen peas
1 handful of frozen sweetcorn
Prepare all your ingredients – chop the red pepper, red onion and bacon. Whisk up the 3 eggs, grate the cheese and boil water in a pan on high heat.
Begin to fry the bacon and onion in a frying pan and while they’re cooking crack the 3 eggs and mix in a bowl with grated cheese.
Boil the frozen peas and sweetcorn and add to the bacon, onions and pepper.
Once all the veg is nearly cooked, add the egg and cheese mixture into the frying pan and make sure it’s all evenly distributed.
After about 5 minutes, now is the time to attempt to turn it! If you can manage that, good for you! I can’t - so I put the frying pan under the grill which is on a medium heat for another 5 minutes or until it’s cooked.
Serve on a plate and enjoy!!
